1.处理好的肥肠切成小段。(清洗方法,之前有发过)

2.嫩豆腐用淡盐水浸泡。(喜欢吃老豆腐就放老豆腐)

3.准备的底料。

4.分别把干红辣椒切成段,大葱切碎,姜切片,蒜头剁小备用。

5.开火,把肥肠放锅里干炒。

6.慢慢炒出水分后,盛出。

7.锅洗净,烧干,倒油,放入三匙羹豆瓣酱,小火爆香。

8.炒出红油(大约五分钟,全程小火)

9.放入大料(香叶草果桂皮八角白蔻等)、蒜蓉、干红辣椒、姜片和大葱炒香后(大约两三分钟,都是小火)倒入肥肠翻炒。

10.炒了大约两三分钟,沿着锅边倒料酒去腥。

11.放入一匙羹的生抽和少许白糖。

12.倒入开水盖上盖子。(没过面即可)大火烧开,小火焖一个小时。

13.准备点葱花和小米椒切成圈。

14.一个小时后,汤汁少了大半。

15.放入泡了盐水的豆腐。

16.用锅铲轻轻推动,以让汤汁能覆盖住豆腐表面,盖上盖子,继续煮十分钟。

17.十分钟后关火。

18.用锅铲盛到碗里。

19.撒上葱花和小米椒。(不能吃辣可不加)

小窍门&温馨提示
1豆瓣酱很咸,我都没有放盐。
2不能吃辣的可以少放点辣椒。
3嫩豆腐放盐水浸泡是为了更好的入味,也使得在煮的时候不容易碎掉。
